Manager Julio Gonzalez said their in-house butcher is what makes the restaurant's menu legendary.
"We take a lot of pride in the fact that our meat has never been frozen, it's all fresh and all certified black Angus," he said.
The restaurant cuts about 100,000 pounds of beef annually, but the best-selling cuts are the sirloin, brought out so tender it melts in your mouth, and the hearty ribeye, Gonzalez said.
"We cater to our guests' needs," he said. "We wouldn't be there if it wasn't for them coming in ... if there's a certain cut they want, we can go back and cut that steak as they need it."
Texas Roadhouse is open from 4 p.m. to 10 p.m. Monday through Thursday, 4 p.m. to 11 p.m. Friday, 11 a.m. to 11 p.m. Saturday, and 11 a.m. to 10 p.m. Sunday.
